Delicious Protein Packed Whole Wheat Blueberry Pancakes
I have been forever in the search of a delicious and sweet breakfast treat that doesn't make me feel completely guilty after I've chowed down wayyyy more than I should. After some trial and error i came up with this not only deeelish recipe but its also completely clean and jam packed with protein!
There are SO many optional choices within this recipe that allows you to make it customizable to you and your family's likes and preferences. Even down to the protein powder. On numerous occasions I have chosen to make it without the powder for the different taste and texture the pancakes have without it!
Protein Packed Whole Wheat Blueberry Pancakes
Ingredients List
- 2 cups whole wheat flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 tablespoons brown sugar (Optional)
- 1 small scoop unflavored or vanilla whey protein powder (Optional)
- 2 teaspoons baking powder
- 1-1/2 teaspoon ground cinnamon
- 1/2 tsp of nutmeg (Optional but it really adds flavor!)
- 1-1/2 teaspoon vanilla extract
- 1-1/4 cups milk (Whole or 2%)
- 1 cup plain Greek yogurt
- 1/4 cup honey
- 2 large eggs
- 3 Tablespoons of melted butter, coconut oil, or canola oil
- 1 and 3/4 cups frozen blueberries (Optional)
- 1/4 cup walnuts (Optional)
- Optional Toppings (Syrup, whipped cream, bananas, blueberries, walnuts)
Berry Compote in lieu of traditional Pancake Syrup or other toppings (healthy alternative):
- 1 cup frozen berries
- 3 tablespoons Agave or Honey
- 1/4 cup of water
Directions
- Combine all dry ingredients in a large bowl (Flour, salt, baking soda, brown sugar, protein powder,baking powder, cinnamon, and nutmeg). Set Aside
- In a small bowl combine cup of Greek yogurt with 1/4 cup of honey and a few pinches of the cinnamon.
- In another large bowl combine all wet ingredients ( Vanilla extract, milk,eggs,and oil of choice). Add in Greek yogurt with honey to the wet mixture. Whisk until blended together.
- Take bowl containing wet ingredients and slowly add to bowl with dry ingredients. Make sure to stir in between.
- Once all ingredients are combined slowly mix until consistency is smooth and not lumpy!
- Next slowly add the blueberries and walnuts. Be careful not to stir too aggressively or you will turn the mixture purple! (which in my opinion is not a bad thing! haha)
- Your pancake batter is now ready to go!
- Heat a skillet on medium heat and spray lightly with canola or olive based cooking spray.
- Add a ladle sized scoop (about a 3/4 cup) to the pan.
- As you see the edges begin to bubble it is time to flip!
- Be patient with these pancakes! they take a little longer to cook through as they are more dense than white flour pancakes! If you turn up the heat they will burn!
- Once your pancakes are done cooking top with syrup, whipped cream, bananas, blueberries, walnuts, or my berry compote substitute below! ENJOY!!

Directions for the Berry Compote (syrup substitute):
Combine berries, agave or honey, and water in a small saucepan on medium high heat. Stir slowly every few minuets (it should start to bubble) to prevent burning until the ingredients create a syrupy texture. Top on warm pancakes and enjoy!
